Padaneer (Sweet Palm Sap)
Padaneer is a natural, refreshing drink from the palm tree that cools the body and satisfies thirst in the summer. To collect it, a branch is cut, and an earthen pot coated with lime is tied to it. The sap drips into the pot. The lime prevents the liquid from turning into alcohol. If it is collected without lime, it becomes an alcoholic drink called kallu (toddy), which is currently banned. Padaneer is rich in nutrients and is mostly collected between the Tamil months of Masi and Vaikasi (late winter to early summer).
Palm Jaggery (Karupatti)
Palm jaggery, or karupatti, is a healthy alternative to sugar. It is made by boiling padaneer and pouring the thick liquid into molds. In ancient times, it was a regular part of the diet, helping ancestors stay free from diseases. Today, its use has decreased. Tamil Nadu leads India in making and exporting palm jaggery. The towns of Vembar and Udangudi are famous for it, with Udangudi jaggery being praised as the best in quality.
Panangkalkandu (Palm Sugar Candy)
This is a medicinal crystal candy made by pouring boiled palm sap into clay pots and burying them underground. It is highly beneficial for health. For example, mixing palm candy into boiled milk helps children grow strong. On average, one palm tree produces about 25 kilograms of jaggery and 10 kilograms of candy every year.
Nungu (Ice Apple)
Nungu is a seasonal summer fruit with three juicy, translucent kernels inside each pod. It cools the body instantly. A popular summer treat is to place young nungu inside a bundle of fresh palm leaves and drink the juice, which carries a wonderful natural aroma.
Panam Kizhangu (Palm Sprouted Tubers)
